Recipe of the week: Camembert and cranberry bites
Soft cheese and cranberry sauce in perfect little filo pastry parcels – what's not to love? This tasty snack is a great way to use up leftover cheese and some of that extra cranberry sauce you bought for Christmas.
Ingredients
3 sheets filo pastry
100g Camembert cheese, or any leftover cheese
50g cranberry sauce
25g butter, melted

Pinch of chives, chopped
Method
The first job is to make the little filo baskets, this is very easy and if you have a small muffin tin it will be even easier.
Take the three sheets of filo pastry and cut in half, then half again and keep cutting until you get a bundle of squares of pastry about 6cm wide.
Each basket will use three squares of pastry – take one square of pastry and brush with the melted butter, next add another square on top but this time change the angle slightly, and then again with the third square. It should look like a star.
Push your star of pastry into the muffin tin and repeat until all the pastry has been used up.
Bake in the oven at 175C for eight to 10 minutes until golden brown.
Next, cut the cheese into half centimetre pieces. Fill each of your cooked baskets with the cut cheese and top with a little cranberry sauce.
Pop back into the oven for three to four minutes or until the cheese starts to melt.
Top with some chopped chives if you have them.
