Recipe of the week: Turkey, avocado, tomato salsa and chipotle tacos

This is an amazing way to use up leftover turkey (or indeed chicken) meat. The chipotle adds a smokiness and the salsa is so fresh and flavourful.

Ingredients

12 15cm soft flour tortillas

200g cooked turkey, shredded

3 fresh plum tomatoes, diced

1 red onion, diced

3 red chilli, diced

2 tsp chipotle paste

100ml mayonnaise

1 lime, juiced

Bunch coriander, chopped

Salt and pepper to taste

1 pinch dried oregano

1 pinch ground cumin, or more to taste

2 avocados, mashed

Method

Chop the tomatoes, chilli and onions.

Place in a serving bowl. Add salt and pepper to taste and teaspoon of chipotle paste, the cumin and the dried oregano.

Fold through the chopped coriander.

Let the salsa sit for an hour for the flavours to combine.

Mix the mayonnaise with the remaining one teaspoon of chipotle paste.

Meanwhile, remove the avocados from their shell and mash together with the lime juice and salt and pepper.

In a hot pan, heat the flour tortillas then fill them with the turkey, avocado mix, salsa and top with chipotle mayonnaise.
